Coconut Cranberry Chews

Makes about 6 dozen cookies
These are great to make and then freeze!

1 1/2 cups (3/4 lb.) butter at room temperature
2 cups sugar
1 tablespoon grated orange peel
2 teaspoons vanilla
3 1/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cup dried cranberries
1 1/2 cups sweetened flaked dried coconut

1. In a large bowl, with a mixer on medium speed, beat 1 1/2 cups butter, sugar, orange peel, and vanilla until smooth.
2. In a medium bowl, mix flour, baking powder, and salt. Add to butter mixture, stir to mix, then beat on low speed until dough comes together, about 5 minutes*. Mix in cranberries and coconut.
3. Shape dough into 1-inch balls and place about 2 inches apart on buttered 12 by 15 inch baking sheets.
4. Bake at 350 degrees until cookie edges just begin to brown, 8-11 minutes. If baking 2 sheets at once switch their positions halfway through baking. Let cookies cool on sheets for 5 minutes, then transfer to racks to cool completely.

* note from Teresa: it took me only about 1 minute on my KitchenAid mixer.

Oooh, those sound yummy! May have to try my hand at a batch.

I made some cranberry/white chocolate muffins a few weeks back and they turned out great. Tis the season for cranberry recipes ;)

Yum, these read delicious! :) I have never tried cookies with cranberries, this will be fun.

I have a question... with grated orange peel or any type of peel, can that be found or would I have to actually peel the fruit and grate? (I feel goofy asking but I've never known).

Navita, LOL...harmless unless applied directly to the waistline, right? We probably won't be in HK for a while. I hate to fly now, and it's harder with kids. Yeah, I'm lucky and glad that dh cooks or I'd be broke eating out all the time. ;)

Oh this sounds extremely yummy. I have already noticed my jeans getting tighter unfortunately...but do I care? NO! I'm gonna eat my heart away until after the New Year and then make the New Year resolution I never keep. :)

Firefly Mom, it definitely is the season for cranberries! LOL! Tis the season no one gets urinary tract infections. ;D

Michelle-Pixie, I imagine you can buy zest in the spice aisle at a grocery store (I think I may hve even seen that...but I couldn't bet money on my memory). What I do is zest my own citrus fruits whenever we need the juice of one for a recipe. I store the zest in the freezer and when I use a recipe that calls for zest, I go to the freezer and take out what I need...it's so convenient!
