Egg noodles...easy and delish!

I'd talked about it for years and everyone I've ever spoken to about it said it is incredibly easy, so I have nothing to blame but my own lazy butt for not trying it sooner. And, yes, I agree: it is incredibly easy to make your own noodles!

Dh was wanting to make beef stroganoff, so I set out to make egg noodles. I searched online and looked a number of recipes, eventually settling on mixture of two different ones (from About.com, Cooks.com and from CDKitchen). I ended up using 2 C flour, 1/4 t salt, and 3 eggs, and pretty much followed the About.com instructions.

The flour and salt, mixed together with a fork:I made a well in the center of the flour mixture and added the 3 eggs:
Per the About.com instructions, I scrambled the eggs first with the fork, then slowly started incorporating the flour:

After incorporating, I dumped the lumpy dough out onto a floured surface:Kneading for about 10 minutes or so yielded a much smoother dough ball:

Then, I rolled up the rolled-out dough, jelly-roll style, and cut it into desired widths:
I twirled the dough ribbons into a streamer-like shape, just for fun:
After drying out for a couple of hours on the counter (and they were, by no means, actually dry-dry), dh made stroganoff with them! Here it is, served with a salad of greens from our garden:

Wow...that IS easy...how did they taste? Was the texture much different than other egg noodles (I'm a texture girl :P lol)? I'm going to have to try this...We don't eat noodles all that often, but if its this easy than making them is worth the extra time.
Those greens look awesome...makes me want to go out and chant over my spinach.."grow grow grow" lol

Hey Stace, the texture was fine except that I didn't roll them out thin enough so they were thicker than store-bought egg noodles. I need to buy me a pasta roller! :) As the Cooks.com site says, it's pretty economical to make your own noodles...I guess especially if you buy flour in bulk. (Their quote was that "A five lb. bag of flour will keep you in noodles for a month!"). And yes, spinach has been scientifically proven to grow faster if you chant at them. LOL!!

Do you know, I have had a pasta roller for about 8 years and have never used it. This might just inspire me to get it out and have a go! Thanks for the inspiration. Looks yummy!

Mmmmmm... I want some beef stroganoff now!! I think I'd have to be lazy and throw the dough in my Kitchenaid to knead it, though.

Kitchenaid also makes a pasta attachment that hooks into the front of your machine! :) No need for another piece of equipment...just the attachment.

Linda, I've been thinking about one of those, and waffling back and forth between that and the hand-crank ones that clamp to the counter top. There are about equal pros and cons to both, so I haven't been able to decide yet. :}

Wow, I am impressed Teresa! Those noodles are as perfect! I'v never been a huge fan of beef stroganoff but I'll tell you this, I've made noodles like this before for homemade chicken noodle soup. :))

Your stroganoff looks yummy. DS has been wanting to make homemade noodles forever and I told him it was too complicated. I guess I was wrong and will have to eat my words (ha ha, aren't I punny?).

I say definitely buy the manual pasta maker, much more versatile, less energy used and there's something so satisfying about rolling out the dough. I'll buy you one for an early Christmas present when you guys drive out here okay?
