The crop of beets that hubby grew in the spring did well. We got some yummy greens and equally yummy roots from them. That's the thing I love best about beets: not only are they sweet and tasty, but you can eat all parts of the plant, not just the fruits or the leaves or the stems like some wasteful veggies I won't name. *cough* rhubarb *cough*
Besides, who can resist the gorgeous purplish-red of these babies?
My only regret was that I don't dye many things and had to throw out the pot of equally beautiful red water that I'd boiled the beets in.
Do you like beets or do you think they taste like dirt as some people I know do? ;)
